Ingredients: 1 lb. dry elbow pasta 1 stick butter ½ cup flour 1½ cups whole milk 2½ cups half and half 4 cups medium sharp cheddar cheese divided 2 cups Gruyere cheese divided ½ T. salt ½ tsp. black pepper ¼ tsp. paprika

Directions:Preheat oven to 325º and grease a 3 quart baking dish.(9X13) Bring a large pot of water to a boil. Add pasta and cook 1 minute less than package directions. Drain and drizzle with a little olive oil. While water is coming to a boil, grate cheeses and toss to mix. Divide into 3 piles. 3 cups for the sauce, 1½ cups for inner layer and 1½ cups for topping. Melt butter in a large saucepan over medium heat. Sprinkle with flour and whisk to combine. Cook for approximately 1 minute. Whisking often. Slowly pour in milk and half and half while whisking constantly until smooth. Continue to heat and stir over medium heat until very thick. Stir in spices and 1½ cups cheese. Stir to melt. Stir in another 1½ cups cheese and continue to stir until smooth. In a large bowl, combine pasta and cheese sauce. Pour half of the pasta mixture into the prepared dish. Top with 1½ cups cheese. Pour remaining pasta on top of first and finish with 1½ cups cheese. Bake for 15 minutes until bubbly and golden brown. |
