4-6 white fish fillets(cod, haddock, tilapia)
1 cup all-purpose flour
¼ cup cornstarch
1 tsp baking powder
1 tsp salt
½ tsp black pepper
½ tsp paprika
½ tsp garlic powder
½ tsp onion powder
1 egg
1 cup cold water (club soda-extra crispiness)
Vegetable oil for frying

1. Prepare Fish: Pat fish fillets dry with paper towels to remove any excess moisture, which helps batter stick better to fish.
2. Make Batter: In large mixing bowl, whisk together flour, cornstarch, baking powder, salt, black pepper, paprika, garlic powder, and onion powder.
In separate small bowl, beat egg; then stir it into dry ingredients. Slowly add cold water (club soda for extra crispiness) while whisking until batter becomes smooth, with a consistency similar to pancake batter.
3. Fry Fish: Pour vegetable oil into a deep skillet or frying pan to a depth of about 2-3" and heat it over med-high heat. Dip each fish fillet into batter, ensuring they are fully coated. Carefully place battered fish into hot oil, frying 2-3 fillets at a time.
Cook fish for 4-5 min per side, flipping halfway through, until they are golden brown and crispy. Remove fish from oil with a slotted spoon; place on plate lined with paper towels to drain any excess oil.
4. Serve crispy fish immediately with dipping sauces like tartar sauce or lemon wedges. For a classic fish and chips experience, pair fish with fries, coleslaw, or hush puppies. Enjoy your crispy, golden Batter Dipped Fish!
