4 medium Yukon Gold or Russet potatoes, peeled and diced
2 large carrots, peeled and sliced
1 medium onion, chopped
2 cloves garlic, minced
4 cups chicken or vegetable broth
5 oz kielbasa (optional/diced)
1 cup heavy cream (or tempered sour cream – look notes)
2 tablespoons fresh dill, chopped
Salt and pepper to taste

Prepare Vegetables: Peel and dice the potatoes. Peel and slice the carrots. Chop the onion and mince the garlic.
Cook Vegetables: In a large pot, combine the potatoes, carrots, onion, and garlic. Pour in the broth and bring to a boil. Add the kiełbasa, if using.
Simmer: Reduce the heat and let the soup simmer for about 20-25 minutes, or until the vegetables are tender.
Add Cream: Stir in the heavy cream (or the tempered sour cream) and fresh dill. Season with salt and pepper to taste.
Serve: Ladle the soup into bowls and garnish with additional fresh dill if desired. Serve hot.
