Grano Duro = Italian Duram wheat = Semola = Semolia. All the same. Can be milled to 0 for normal grind or 00 for fine. 00 best for pasta. Best for egg free pasta. Stronger and more form pasta.

Grano Tenero = white Italian flour. Best for egg pastas.

It is the grind that makes pasta easy to manage and go through the roller easier. Need 00 flour. Can be white or Durum. Durham is stronger and better for shaped or thicker pastas.

AP flour is Corser. Also called Chef flour. That means it doesn't stick to itself well and harder to manage. When boiled, it tends to fall apart in the water.

Bread flower is high in protein . that affects the stretchability of the flour . and a good substitute for double zero.

Higher protein for pasta, pastry and bread. Lower protein for pizza and other things.

Red Caputo bags have higher protein. Blue lower and Chef or AP flour

Use Semolina Durum 00 for pasta that holds sauce and shape. Easy to put through the machine
