1 pound ground turkey
2 stalks celery
1 red pepper
1˝ (28 oz) cans San Marzano peeled tomatoes
1 large onion, chopped
3 cloves garlic, minced
2 T chili powder
2 tsp cayenne pepper
2 tsp cumin
1 tsp smoked paprika
1 tsp red pepper flakes
2 tsp salt
1 tsp pepper
2 cans kidney beans, rinsed and drained
˝ cup jarred salsa
˝ cup chicken broth (or more as needed)

In a large, heavy pot (Le Crueset if you've got it, any stockpot if you don't), heat 2 T olive oil. Sauté the onions, celery, red pepper until soft, 5 minutes or so. Add the garlic and cook an additional 30 seconds, until aromatic. Add the ground turkey, breaking it up as it browns. Once browned, add tomatoes, squeezing them through your clean fingers to break up the tomatoes and including all the juice. Add each of the seasonings and the beans and simmer for about 30-45 minutes. As it thickens, add some chicken broth and the salsa to reach your desired consistency. Test for seasoning and add as needed.

Serve hot with shredded cheese, sour cream, green onions, sliced black olives.

This is very good chili and is very flexible. If you don't like it very hot, reduce all the seasonings proportionately. I like it fairly hot and that's what I've put in the recipe.
