4 center cut pork chops
Good olive oil
4 T fresh rosemary, chopped
Salt and pepper

Preheat oven to 275º. Heat a grill pan on the stove on medium high heat. Pour 2 T olive oil in a dinner plate. Season each pork chop on both sides with salt and pepper and press 1 T chopped rosemary into each one on both sides.

Dip each pork chop onto the plate with olive oil and swirl around. Flip over to get the other side. Place each pork chop on the grill pan for exactly 2 minutes. Without turning over, turn each chop 180º to get criss-crossed grill marks on that side. Cook another 2 minutes. Flip each chop over and cook for 2 minutes, rotating 180º again for another 2 minutes (8 minutes total).

Put entire grill pan in oven for another 5 minutes. Remove and enjoy!

This is the easiest recipe ever! And it's from Jacques Pepin! Comes out great every time and the pork chops are not dry. It also works with bone-in chops, although if they're thicker you may need to leave in the oven a little longer. I've also used this for chicken breasts (cut thin) and it's equally delicious!
