2 cups Vidalia onions, diced
2 cups mayo
2 cups Swiss cheese
chives, for garnish
Pita chips, tortilla chips, crackers, veggies etc.

Directions:

1. Preheat oven to 400 degrees

2. In a large bowl, combine all ingredients. Reserve 1/2 cup of Swiss for top.

3. Spread mixture into a 9x7 or 8x8 baking dish, top with Swiss and bake 20-25 minutes or until hot and bubbly and the top is just beginning to brown. Do not let go past just brown. Remove early if you have too. The mayo will separate if left too long.

4. Serve with chips, crackers etc.
