Ingredients: 2 T butter 1 cup onion, chopped ˝ cup celery, chopped 2 cloves garlic, minced 1 quart chicken or vegetable broth 2 can artichoke hearts, chopped 1 cup half-and-half 1 T fresh lemon juice (˝ lemon) 1 tsp dried tarragon salt and pepper

Directions:Heat the butter in large pot over medium heat. Sauté onion, celery and garlic until soft, about 10 minutes. Add chicken broth and simmer 15 minutes. Add artichoke hearts and simmer 10 minutes. Puree soup with an immersion blender (in pot) or regular blender (out of pot). Add the half-and-half, lemon juice and tarragon and continue heating. Season with salt and pepper to taste. |

Notes: Jan and I did a road trip in 2019 from Michigan to Florida and stopped for the night in Nashville. It was a cold and rainy night and we went to a restaurant that's famous for this soup. It was delicious! The owner wouldn't part with her recipe, but this comes pretty close and it's surprisingly easy!
