5 Eggs, separated
½ tsp Salt
½ cup Ice Water
1½ cups Sugar
1½ cups Flour
1 tbsp Lemon Juice
1 tsp Vanilla
Directions:
Directions:
Beat together egg yolks and salt for about 1 minute, until light and lemon coloured. Add ice water and continue beating for another minute. Sift flour and sugar and gradually add to egg yolk mixture, beating after each addition. Add lemon juice and vanilla, mix thoroughly.
Beat egg whites until stiff peaks form. Gently fold into batter.
Pour batter into a lightly greased bundt pan. Bake at 350ºF for 50 minutes or until knife inserted in centre comes out clean. Turn off oven and leave for another 10 minutes to prevent collapsing. Invert to cool and dust with icing sugar or frost.
