1/2 Block Firm Tofu Pressed 30 minutes
1/4c Refined Coconut Oil
3T Nutritional Yeast
1t. Lemon Juice
1/2t. Braggs Apple Cider Vinegar©
1t My Tahini Recipe (See my homemade recipe)
3/4t. Sea Salt
2T Cold Water
1-1/2t. Potato Starch
1t White Pepper
1t Fresh Ground Black Pepper

Directions:

Add Tofu, Coconut Oil, Nutritional Yeast, Lemon Juice, Apple Cider Vinegar, tahini and Salt to a Sauce Pan. Blend al together with an Immersion Blender.
Add Potato Starch to Cold Water and dissolve well. Add to mixture and stir well. Blend until creamy. Heat on medium heat for 5 minute. When it’s heated and thickened, pour on parchment and form into a circle shape. Wrap these creations in parchment then plastic wrap tightly and place in refrigerator for a minimum of 3 hours. I keep mine overnight. After the cheese is set, you can roll it in cracked white and black peppercorns, pistachios, dried cranberries, dried herbs, anything your imagination can drum up. This cheese is so amazing!

When Bruce and I were first married, our work schedules were crazy and opposite! We finally had a New Years Eve home together, and the kids had that weekend at their dads house. This was our first New Years together and alone! Hmmm! What to do?! At this time neither one of us were vegans, but I was vegetarian. I wanted to do something special for us this night! I bought goat cheese, crackers, and wine for us to celebrate New Years!

That day is still an amazing night in my memories, and I wanted to re create it, but vegan style! I have spent many days, nights, hours researching how to make vegan cheeses that do not take over a month to make!

This one is so tasty, reminds me of that New Years, and is totally plant based and cruelty free! I hope you enjoy it!
