1- 2 Pounds of Bacon
1/2 Teaspoon Salt
3 Green Tomatoes (Sliced 1/4 inch thick)
1/2 Cup Yellow Cornmeal
1/2 Cup Flour
1/2 Cup Milk
1 Egg
1/2 Cup Vegetable Oil (For Frying)
1/2 Teaspoon Pepper
1/2Teaspoon Cayenne Pepper
1/2 Teaspoon Sugar
Lettuce
White Bread
Mayo

Directions:

Cook bacon and set to the side. Slice tomatoes about ¼ inch thick. In a shallow bowl
whisk together the milk and egg. In a separate bowl combine the cornmeal,
flour, salt, pepper, cayenne pepper, and sugar. Heat half the oil in a large skillet.
When the oil is shimmering and sputters if water is dropped in, it's the perfect
temperature. Dunk each tomato slice in the egg/milk mixture, then dredge in
the cornmeal mixture until well coated. Place in the hot skillet. Repeat until the
pan is full, but do not overcrowd. Work in batches. Cook until the bottom is
golden brown- about 3-4 minutes. Flip carefully and cook until the other side
is browned. Place the fried green tomatoes on a plate lined with paper towels
(to soak up excess oil). Assemble the sandwiches with fried green tomato, bacon,
lettuce, and mayo.
