1 fryer, cut-up and seasoned
2 cans tomato sauce (or 1 can sauce and fill can with broth)
1 onion, chopped
1/2 large bell pepper or 1 small bell pepper, chopped
1 stalk celery, chopped
1 pod garlic, chopped
1 C flour,(for rolling chicken in and seasoning the flour)
1/4 c. oil

Cut up fryer into pieces and season. Season flour and roll
chicken pieces in flour. Meanwhile have oil heating in pot. Add
floured chicken to hot oil and let brown. Turn chicken to let all
sides brown. Add cut vegetables and let wilt. Pour in tomato
sauce, broth, or just water. Let simmer for 30-45 minutes until
chicken is cooked. If the gravy is boiling out add some water or
chicken broth. Serve over hot rice.
