1 medium onion
⅓ cup butter
2 cans beef broth (284 ml)
2 cups plain croutons
1 cup shredded mozzarella or havarti

This is my really quick and basic take on the French classic; it will make 3-4 servings.

Slice onions thinly but leave in long slices. In a medium pot, melt butter. Add onions and sauté on medium heat until caramelized and fragrant. Add beef broth, stir, cover, and turn heat to low to simmer for 10-15 minutes.

Transfer to onion soup crocks or large sturdy mugs that can take high heat. Top with croutons, covering entire surface of soup in each mug. Lastly, sprinkle with a thick layer of shredded mozzarella (or havarti, which I prefer).

Place mugs on a baking sheet under the broiler. Broil until cheese is melted and starting to brown. Remove mugs from oven and place on saucers or other small heat-safe dishes. Cool for 5+ minutes, then serve.
