1 pound beef stew meat
1 cup vegetable oil
1 large onion, diced
1/2 small can tomato paste
5 teaspoons beef bouillon powder
potatoes, quartered (optional)
water
1 cup creamy peanut butter (Skippy or Jif are best)
salt & pepper
crushed red pepper

Directions:
Directions:

  1. Brown meat in oil with onion, bouillon, and spices.

  2. Add tomato paste, peanut butter, and water to a medium thick consistency. Add potatoes.

  3. Simmer for about 2-3 hours, or transfer to a crock pot on low for same amount of time, stirring occasionally. If stew is too thin, simmer a while longer, and if too thick add a bit of water.




Serve over cooked rice.

"A traditional African dish, from Sierra Leone, in West Africa. Originally made with monkey meat, but monkey is difficult to acquire in the U.S., so beef will suffice. Best when served spicy hot.


This dish isn't for everyone. It has kind of an unappetizing appearance, and you have to like peanut butter, but it really IS good. Also very filling, and has probably a GAZILLION calories and cholesterol."
