1 1/2 pounds (6 links) mild Italian sausage, cut into 1-inch pieces
10 small new red potatoes, quartered
1/2 teaspoon pepper
1/2 teaspoon thyme leaves
1 cup red onion, cut into 1/8 inch slices
1/4 cup chopped fresh parsley
1 green pepper, cut into 1-inch pieces

  1. In 10-inch skillet combine sausage, potatoes, pepper and thyme. Cook over medium-high heat, stirring occasionally, until potatoes are browned (10 to 12 minutes).

  2. Reduce heat to medium-low. Cover; cook until potatoes are tender (8 to 10 minutes).

  3. Stir in remaining ingredients. Continue cooking, uncovered, until vegetables are crispy tender (4 to 5 minutes).



MICROWAVE DIRECTIONS:

  1. In 3-quart casserole combine sausage, potatoes, pepper and thyme.

  2. Cover; microwave on HIGH, stirring after half the time, until potatoes are tender (9 to 11 minutes).

  3. Stir in remaining ingredients. Cover; microwave on HIGH until vegetables are crispy tender (4 to 6 minutes).
