Mayo-marinated Grilled Chicken with Pesto Recipe

Ingredients: 8 chicken breast cutlets or 4 chicken breasts, cut horizontally to make them thin Kosher salt and ground black pepper ⅓ cup good store-bought mayonnaise 1 cup good pesto sauce (homemade or store-bought)

Directions:Season chicken cutlets on both sides with salt and pepper and set aside.
Whisk together mayonnaise and pesto in a large measuring cup or small bowl. Put chicken in plastic bag and cover well with mayo/pesto mixture. Cook immediately, or for better flavor, refrigerate for 4 to 24 hours.
To cook on the grill: Heat a gas or charcoal grill over high heat for 10 minutes(20 to 30 minutes for charcoal). Cook chicken cutlets directly over high heat, turning and flipping occasionally, until just cooked through and lightly charred all over, about 4-5 minutes. Transfer chicken to a serving platter. Spoon some of the remaining pesto mixture over the chicken and serve the rest in a small bowl the side. |

Notes: It sounds strange to use mayo when grilling or roasting chicken, but my sister, Jan, made me a convert with her Mayo-Herb Roasted Turkey. We made it for Thanksgiving one year and it was fantastic! This recipe, combined with pesto, is easy and delicious! I made it over and over again this summer on the grill and people always raved about it!
