1 pound pasta of choice
1 zucchini sliced into half rounds
1 red bell pepper sliced
1 small red onion diced
8 oz mushrooms of choice
1 small head of broccoli chopped
2 cups fresh spinach
3 garlic cloves
4 oz of favorite pesto or more to taste
Sun dried tomatoes to taste
1/4-1/2 cup grated parmesan cheese
olive oil to sauté
salt and pepper to taste

1. cook pasta to al dente

2. sauté all veggies

3. add pasta to veggies, mix in spinach, tomatoes and pesto

4. mix in parmesan, salt and pepper.

5. Garnish with basil and parmesan (optional)

This can be made vegan by not adding the cheese and using vegan pesto
