6 medium sized potatoes
2 tbsp. butter
2 medium-sized onions, thinly sliced
1 3 1/2 oz can Swedish anchovy fillets - optional
dash of pepper
2 tbsp. bread crumbs
3 tbsp. butter
3/4 cup cream or half-and-half

Pre heat oven to 400 degrees. Peel and cut potatoes into strips 2 inches x 1/4 inch. Put potatoes in cold water to prevent discoloration. Melt 2 tbsp. butter in skillet. Add onions and cook until soft. Do not brown. Dry potatoes with paper towels. Layer potatoes, onions, and anchovies in greased 11/2 to 2 -quart baking dish. Begin and end with potatoes. Dot casserole with butter and sprinkle with pepper and bread crumbs. Pour cream around the edges of the casserole. Bake until potatoes are tender, and most of liquid is absorbed. 45-60 minutes.

This is a popular Swedish recipe and is a must for Christmas Eve. The anchovies melt and are not obvious in the baked product. You may choose to omit them from the recipe. Carol Warner now prepares the potatoes for the Swedish Smorgasbord and you will find her recipe in the book.
