8 thinly sliced russet potatoes
1/2 c heavy cream
1/4 c olive oil
1/4 c melted butter
salt to taste

1 c avocado oil for final baking step

Directions:
Directions:
Line loaf pan with parchment paper.
Add all ingredients except potatoes into bowl, stir.
Add thinly sliced potatoes until coated.
Cover bottom of pan with 2 layers add some of mixture. Salt. Repeat until all potatoes are in pan.
Fold parchment paper over top of potatoes and cook at 350 for 1 hour
Let potatoes come to room temperature.
Cover top of potatoes and add a heavy weight.
Chill in refrigerator over night.

Remove potatoes, cut into desired size pieces
Heat oil, brown all sides, top with salt.
