3 cups quick-cooking oats, uncooked
2 cups sugar
1 cup peanut butter
1 stick + 1 tbsp unsalted butter, divided
½ cup milk
1 tsp vanilla
½ cup chocolate chips

Directions:
Directions:
Pour oats into large bowl and set aside. Line a baking sheet with parchment paper. Melt 1 stick butter in saucepan on medium-high heat, stirring frequently. Bring to a boil for 1 min then remove from heat. Add peanut butter and vanilla extract. Stir to combine. Pour peanut butter mixture over reserved oats. Add milk and sugar, stir until fully incorporated. Scoop 1 tbsp of batter onto baking sheet, pressing down to flatten.
Melt chocolate chips with 1 tbsp unsalted butter in microwave. Melt in 20 second increments, stirring in between each 20 second set, until chocolate is fully melted.
Use a spoon to drizzle chocolate over top of cookies. Cooke are ready to eat once the chocolate has cooled and set. You can chill them in the fridge for one hour is desired.
Store in an airtight container.
