Chicken marinade:
1 tsp salt
1 tsp garlic powder
1 1/2 tsp paprika
1/2 tsp dried minced onion
1/2 tsp cayenne pepper
1/2 tsp oregano
juice from 1/2 lemon
about 2-3 tablespoons olive oil- you want to make a spreadable paste for the chicken

1 package smoked sausage sliced into 1/4" slices
1 package boneless skinless chicken thighs- trimmed of fat
1 medium diced yellow onion
1 diced green bell pepper
2 stalks celery, diced
1 cup DRY long-grain rice (I always buy parboiled rice)
2 1/4 c. chicken broth (one carton container)

I use a DUTCH OVEN to make this. If you don't have one, use a large pot as this is a one pot dish!

Turn oven to 350º

Trim chicken thighs. Coat liberally with marinade. Set aside.

Add a little olive oil to dutch oven and heat to medium-high heat. Add sausage pieces to brown on both sides. Transfer to a plate.

Add chicken thighs and brown nicely on each side (about 6-7 min each). Transfer to sausage plate.

Turn heat to MED-LOW and add in chopped onion, bell pepper, and celery. Sauté about 5 minutes until softened. Scraping the bits up from the bottom of the pan.

Add rice and chicken stock, give it a stir, and bring back to a simmer. Then, nestle chicken thighs and sausage (along with all the juices) on top of the rice. Return to a simmer and cover with lid.

Bake for 35 minutes covered. Remove lid and bake another 10-15 minutes until liquid is absorbed into the rice.

Garnish with green onions.

You can use 1 bag of frozen Seasoning Blend for veggies to save time.

Goes really well with Maw Maw's green bean casserole!!
