3 lbs. bone-in thighs (8 pcs)
½ C olive oil
1 onion, chopped
2 garlic cloves
2 tsp white vinegar
zest of 2 oranges
zest of 2 lemons
4 tsp salt
2 tsp chili powder
2 tsp fresh thyme
(or 1 tsp dried)
1½ tsp cinnamon
1¼ tsp smoked paprika
1 tsp cayenne pepper
1 tsp black pepper
1 tsp allspice
¼ tsp nutmeg
1 bunch green onions, chopped

Pat chicken thighs dry with paper towels. Place chicken in a gallon-sized zip-lock bag. Set aside. In a blender, combine all ingredients except green onions. Blend until a smooth paste forms. Pour marinade over chicken and mix thoroughly until chicken is evenly coated. Close bag, marinate chicken in refrigerator 3 hours or up to overnight. Preheat grill to medium-high. Remove chicken thighs from marinade and place on hottest part of grill. Cook 4-5 minutes on each side or until chicken has an even smoky caramelization. Move chicken to indirect heat, continue grilling for about 5 minutes, or until meat thermometer inserted into thickest part reads 165º. Remove chicken and set aside to cool slightly. Serve warm with chopped green onions.
