6 pounds fresh tomatoes (about 18 medium)
1/2 cup white distilled vinegar (5% acidity) or cider vinegar
1 pouch of Mrs. Wages medium salsa mix (most grocery stores have this with the canning supplies)

Directions:
Directions:
Wash tomatoes. Scold 3 minutes in boiling water. Dip into cold water.
Cut out cores, remove skins and chop coarsely. This should yield about 10 cups tomatoes.
Combine Mrs. Wages mix with distilled vinegar in a large non-reactive saucepan. Do not use aluminum. Bring mixture to a boil. Stir occasionally. Reduce heat and simmer for 10 minutes. Salsa is ready

I put in freezer safe containers and let cool. You can store in freezer for up to 1 year.

*I add this to chili and goulash
