2 batches escarole
6 garlic cloves minced
2# Italian sausage
4 C. Chicken broth
2-4 cans white beans drained not rinsed
Salt and pepper to taste
Your favorite grated cheese

Directions:
Directions:
Cook sausage in pieces or links your choice. Take sausage out of pan and set aside. Rinse and clean escarole trimming heavy stems out. Break into pieces add to pan with sausage drippings and 2 -3T olive oil along with garlic. Salt and pepper to taste. Add chicken broth. Cook down til tender. Add sausage and beans and cook until warmed through. Sprinkle with your favorite grated cheese.
