6 medium potatoes
3 Tbsp. butter
1/3 c. diced onion
3 Tbsp. flour
2 c. milk
2 Tbsp. red pimento
1 c. diced Veleveta cheese
2 more Tbsp. butter
salt and pepper
dash of paprika

Directions:
Directions:
Peel and thinly slice about 6 medium potatoes- keep in cold water. Drain well. In skillet mely 3 tbsp. of butter and 1/3 c. diced onion. Saute a few minutes and then add 3 tbsp. of flour- stir well and when cooked a little add about 2 c. of milk and salt and pepper. Then add 2 tbsp. of diced red pimento. Cook until thick- add about 1 c. of diced Velveta cheese and turn off heat- stir until cheese is melted. Drain potatoes well and put in buttered, oven-safe dish. Pour sauce over potatoes- should be well covered (may add more milk if needed). Dot with about 2 tbsp. of butter and sprinkle with Paprika on top. Bake at 350 degrees for about 1 hour or until potatoes are tender.
