4 slices thick cut bacon, cut into 1/4-inch strips
2 onions, halved and sliced thin
3 apples, peeled and cubed
1 large Yukon gold potato, peeled and diced into 1/2-inch pieces
8 ounces macaroni
3/4 cup Half-and-Half
2 cups grated Gruyere cheese
salt
nutmeg

Directions:
Directions:
Cook the bacon in a skillet over medium heat until crisp.
Remove to drain on paper towels, reserving 2 Tbsp drippings in the skillet.
Add the onions to the skillet, season with salt, and cook until soft and golden.
Place the apples in a saucepan with 3 - 4 Tbsp water and simmer, covered, over medium-low heat for about 20 minutes, stirring occasionally.
Mash with a fork until smooth and set aside.
Add the cubed potatoes to large pot, cover with water, and salt generously.
Allow to boil for 2 -3 minutes, then add the macaroni and cook until the macaroni is barely al dente.
Drain the water from the pot, reduce heat to medium, and then stir in the cream until heated through.
Stir in the cheese and a little salt and nutmeg.
Continue to stir until a creamy sauce has been achieved.
Serve topped with the onions and bacon with the applesauce on the side.
