3 cup water
2 cups dry beans
1 tsp vegetable boullon
2 cups crushed tomato
1 chopped onion
2 stalks celery chopped
3 tsp garlic
1/2 tsp dry mustard
1/4 tsp ground ginger
1/4 tsp cayenne pepper
1/2 cup chopped parsley

Directions:
Directions:
In a medium sauce pan, over high heat, add 2 cups water and black eyed peas. Bring to a boil for 2 minutes. Cover and remove from heat and let stand for 1 hour.

Drain the water, leaving the peas in the saucepan. Add the remaining 1 cup of water, bouillon, tomato, onion, celery, garlic, mustard, ginger, and cayenne pepper. Bring to a boil. Reduce heat and simmer for 2 hours. Add water as needed to keep peas covered.
