½ cup chickpea flour
¾ cup warm water
¾ teaspoon salt
2 teaspoons curry powder
½ cup fresh chopped spinach
1 small onion sliced thin

Tamarind Dipping Sauce
1/4 cup seedless tamarind paste
3 cups water
1 tbsp oil
1/2 tsp cumin seeds
2 tablespoons granulated sugar
1/4 tsp ground black pepper
2 tablespoons curry powder
1 tablespoon salt
2 teaspoon cornstarch diluted in 2 teaspoon of water

Pakoras:
Mix all ingredients. Place in the refrigerator for 30 minutes. Spoon a few tablespoons of the mixture into avocado oil to fry. 1-3 minutes per side, till golden brown.

Sauce:
Simmer all the ingredients in a sauce pot for 5-7 minutes. Let the sauce cool and thicken before using. This makes a lot of sauce. Sometimes we freeze half of it.
