2 cups sugar
2 cups water
2 cups strong vinegar
1 tsp cloves
1 tsp allspice
1 Tbsp cinnamon

Directions:
Directions:
Select small, young beets. Cook until tender, then dip into cold water. Peel off skins. Make syrup with the sugar, water, vinegar, cloves, allspice and cinnamon. Pour over beets and boil 10 minutes. Pack into sterilized Kerr jars and seal. 1 batch is about enough to cover 10 pints.
