CRUST:
3 cups loose pack hash browns or 5 medium potatoes
1 beaten egg
1/4 cup finely chopped onion
1/4 cup Parmesan cheese

FILLING:
2 medium zucchini, thinly sliced
1 clove of garlic
1 Tbsp butter
3 beaten eggs
3/4 cup (3 oz) cheddar or Swiss cheese, shredded
1/2 cup milk
2 tsp fresh snipped oregano
salt and pepper to taste

Directions:
Directions:
Mix crust ingredients and press into a 10-inch pie pan and bake uncovered at 400 degrees for 35-40 minutes. Sauté the garlic and zucchini in 1 Tbsp of butter. Lay this on top of the hash brown crust. Mix the eggs, milk, and cheese. Season with salt and pepper and fresh oregano. Pour into crust and bake at 350 degrees for 25-30 minutes.
