No-Bake Strawberry Cheesecake Recipe

1 graham cracker crust
2 (8 oz) cream cheese
1 tsp lemon or lime zest
1 C powdered sugar
1/2 C sour cream
1 tsp vanilla
3-4 C fresh strawberries, divided

Directions:
Directions:
Prepare a graham cracker crust and press into a 9 inch pie pan.

Beat cream cheese until smooth. Add sugar, sour cream, zest and vanilla. Spread on top of crust. Chill. Layer 2 -3 cups of sliced or whole strawberries on top of cream cheese. Top with glaze and a whipped cream topping. Chill well before serving. (Continue on next page)



USE EITHER GLAZE:
Strawberry Glaze:
Puree 1 cup of the strawberries. Combine 2 T sugar, 1/4 cup water, 1 tsp lemon juice and 2 tsp cornstarch. Add to strawberries in small saucepan. Cook until thick and clear.

Strawberry Jello Glaze
1 C water
1/2 C sugar
2 T cornstarch
1 1/2 T strawberry jello
1 T butter
Blend all in a saucepan and cook until clear. Add butter and COOL for at least 15-20 minutes before topping strawberries.

NOTE:
You can also use a regular pie crust. Pre-bake it first.

When we lived in California, I could not wait until strawberry season started so I could start making this dessert. So easy! We had strawberry fields all over and they were so big and sweet. At the end of the season, the fields would be left open and you could go and "glean" the fields and pick all the strawberries left over from the crop.
