3 1/2 C bread flour
2 tsp sea salt
2 1/4 tsp instant yeast
1 2/3 C water (100 degrees F)
1 tbls honey, optional

Quick Rise (2 hours)
Mix the dry ingredients in a large bowl. Using a wooden spoon or Dutch dough whisk*, blend warm water and honey into the dry ingredients. This dough will be wet and shaggy, also very forgiving. Mix until no dry flour is seen. Cover with plastic wrap and put a wet towel on top to proof for 2 hours.

At the 2-hour mark, preheat the oven to 450 degrees with the covered Dutch oven inside.

Dust a large square of parchment paper with flour or a clean counter and turn the dough out carefully. (It will be sticky) Dust the top with flour and, using a dough scraper, gently fold the dough over and form a round dough ball. It will take several turns. Transfer the dough to another square piece of parchment paper and place in a clean large bowl. Cut 1/2 inch slits in dough. ( I use scissors) Cover with the plastic wrap and let rest until Dutch Oven and oven are up to temperature.

Carefully, remove the pot from the oven. (It will be HOT) Lift the parchment paper and dough into the Dutch oven and replace lid. Bake, covered, for 35 minutes. Then, remove lid and bake anywhere from 5 to 10 minute. This is a personal taste issue about the crispness of the crust). Remove bread from pot and let cool on baking rack before cutting. If you try and cut the warm bread, you will not be able to slice it.

Overnight Version (Creates a Yeastier Loaf)

Use 1 teaspoon instant yeast instead of 2 1/4 teaspoons. Proof the bread on the counter for 8 to 24 hours or in the refrigerator for several days. Bake according to directions above.

To bake from refrigerator - take dough out of refrigerator 30 minutes before baking and follow the above instructions.

The longer it rises in the fridge, the more like sourdough it tastes.

TO MAKE CHEESE BREAD
Fold over dough and add 1 1/2 C grated cheddar cheese between layers until fully incorporate. Shape into a round ball and place on parchment paper. I usually set mine in a 4 quart plastic bowl. Sprinkle with additional cheese on top of bread before placing in Dutch Oven.

*Danish Dough Whisk (6.99) can be purchased through Amazon. It makes it easy to stir up bread.

This rustic bread recipe can be doubled successfully if you have a large enough bowl. Divide dough in half before forming into two loaves.
