1 C. of Canola Oil
2 finely diced Chicken Breast
1/2 Tbsp. of Salt
1/2 Tbsp. of Black Pepper
1 Tbsp. of Garlic Powder
1 Tbsp. of Chili Powder
3/4 C. of BBQ Sauce
1 bag of Tortilla Chips
2 C. of Shredded Cheese
1/2 of a Red Onion, finely sliced
1 Tomato diced
8 strips of Bacon, cooked and crumbled
2 Tbsp. of Parsley, chopped
1/2 C. of Sour Cream
1 Avocado, diced

Preheat your oven to 350°F. Heat the oil in a pan over high heat. Cook the chicken with salt, pepper, garlic powder and chili powder for 2 to 3 minutes. Add barbecue sauce and cook it until the sauce has reduced by about half, about five minutes. Remove from heat. In a large skillet spread out to large handfuls of tortilla chips. Player with half of the barbecue chicken, followed by half of the cheese, onion, tomato, bacon, and parsley. Repeat with the remaining ingredients. Bake for 15 minutes. Drizzle the sour cream and sprinkle the avocado on top. Serve! Enjoy!
