2 ½ lbs. of boneless skinless Chicken breast or thighs
Salt and Pepper to taste
1 C. of Flour
3 Eggs, lightly beaten
¼ C. of Vegetable Oil
1 C. of Sugar
6 Tbsp. of Ketchup
¾ C. of White Vinegar
1 ½ Tbsp. of Soy Sauce
1 ½ tsp. Garlic Powder

Cut chicken into bite size pieces. Season with salt and pepper to taste. In shallow bowl, pour flour. In second shallow bowl add eggs. Place chicken pieces in flour, then dip in eggs. In skillet, heat oil over medium high heat. Add chicken pieces in small batches and cook until brown. Transfer cooked pieces to a baking dish. In bowl combine sugar, ketchup, vinegar, soy sauce, and garlic powder. Pour over cooked chicken pieces. Bake at 325º for one hour stirring every 15 minutes. Serve over a bed of white rice.
