2 cups fresh basil
1¼ cups organic sea salt

Process the ingredients using a food processor or blender. When all ingredients are fully incorporated, spread onto a parchment-lined cookie sheet and let air dry or bake at 225º for about 25 min.

Remove and let cool, process once more using a quick pulse to break up the chunks.

Store in an airtight container or spice shaker. Shelf life is up to a year if stored in a cool, dry location.

What a great way to use up that over abundance of basil in the late summer! We love this on fresh tomatoes, sprinkled on a fresh baked pizza. And you could use any herb you want. We're thinking next we do cilantro and use it to rim a margarita!
