4 eggs, separated
2/3 C sugar
1/8 tsp salt
2 T flour
1 T cornstarch
3 C milk
1 tsp banana extract, optional
1 tsp vanilla
2 T butter
3 ripe bananas, sliced
1 box of vanilla wafers

FOR THE MERINGUE
4 egg whites
6 T sugar
1/2 tsp vanilla
1/2 tsp cream of tartar

In a heavy saucepan, slightly beat 4 egg yolks. and then add sugar, salt, milk, flour and cornstarch. Blend with whisk until smooth. Cook over medium heat, stirring constantly, until mixture comes to a boil and is thickened. Remove from heat and add vanilla and butter. Layer vanilla wafers, bananas and custard in an 8 or 9 inch square baking dish. You should have about three layers.

MERINGUE: Beat egg whites until frothy and slowly add 6 tablespoons granulated sugar. Beat until stiff peaks form and then add vanilla. Spread on top of pudding.

Bake in slow oven 325 degrees for 20 minutes or until golden brown on top.

You will never go into a "Mom and Pop" restaurant in the South without seeing Banana Pudding on the menu. Please take the time to make from scratch- NO Jell-O pudding! Banana Pudding is best served the day it is made because the bananas turn brown really quick.
