½ stick butter
4 medium Vidalia onions, sliced
1 can cream of chicken
1 cup sharp cheddar cheese
2 eggs (beaten)
½ cup milk
1 sleeve of Ritz or saltine crackers
2 pie crusts

Directions:
Directions:
Melt butter in large frying pan. Saute onions over medium, until clear. Reserve ⅓ sleeve of crackers for topping. Remove onions and butter from pan and place in a pie crust. Sometimes this recipe will make 2 pies depending on the size of your onions. In a bowl, combine crackers, milk, eggs, and soup. Pour on top of the onions. Top with cheese and crackers. Bake at 350ºF for 20-30 mins or until brown and bubbly.

If you do not have pie crust, you can turn this into my grandmother's casserole and take crushed crackers mixed with melted butter and press in the bottom of a baking dish. She also uses cream of mushroom soup instead of cream of chicken soup.
