Creamy Thyme Sauce - Beef/Chicken/Pork


Ingredients:  
Ingredients:  
1 tbps Olive Oil or Avocado Oil
1/2 tbps fresh choped thyme OR 1/2 tsp of dried thyme
2 garlic cloves minced or grated
2 scallion whites finely chopped
1 cup beef stock concentrate (can substitue other concentrate)
⅓ cup water
4 tbsp sour cream
salt and pepper to taste

Directions:
Directions:
1)Heat a drizzle of oil and butter in a pan over medium heat
2)Add thyme, garlic and scallion whiltes, cook until fragrant ~30 seconds
3)Stir in concentrate and water, bring to a simmer and cook until thickened ~2-3 minutes
IF you cooked any meat prior, you can add the resting juices in with the water and concentrate
4)Remove from heat and stir in sour cream
5)Add salt and pepper to taste
6)Then drizzle suace over meat or serve on the side
 

Creamy Dijon Chive Sauce - Chicken/Fish/Pork


Ingredients:  
Ingredients:  
1 cup vegetable stock concentrate
2 tsp Dijon mustard
1 lemon
⅓ cup water
8 tbsp sour cream
1/2 tbsp finely chopped chives
2 tbsp butter

Directions:
Directions:
1)Heat a pan over medium-high. Stir in stock concentrate, mustard, juice of ½ a lemon and water.
2)Simmer until slightly thickened ~2-3 minnutes
3)Remove from heat and stir in sour cream, chives and butter
4)Season with salt and pepper to taste, then drizzle sauce over meat or serve on the side
IF sauce is too thick, stir in 1 tsp of water at a time until desired thickness reached
 

Lemon Cream Sauce - Chicken/Fish

Ingredients:  
1 tbps Olive Oil or Avocado Oil
2 garlic cloves minced or grated
1 cup chicken stock concentrate (can substitue other concentrate)
⅓ cup water
4 tbsp sour cream
1 lemon
salt and pepper to taste

Directions:
Directions:
1) Heat a drizzle of oil over medium-high heat
2) Add garlic and cook until fragrant ~30 seconds
3) Stir in stock concentrate, water and a pink of salt and pepper
4) Bring to a simmer and cook until slightlt thickened ~2-3 minutes
5) Remove pan from heat and stir in sour cream and lemon juice to taste. Adjust salt and pepper as needed
6) Drizzle over meat or serve on the side
 

Balsamic Drizzle - Chicken/Fish


Ingredients:  
Ingredients:  
1 tbsp Olive Oil or Avocado Oil
1/2 tbps fresh minced rosemarry OR 1/2 tsp of dried rosemarry
1 clove of garlic, minced or grated
10 tsp balsalmic vinegar
2 cups chicken stock concentrate
⅓ cup water
1 tsp sugar
1 tbsp butter
salt and pepper to taste

Directions:
1)Heat a drizzle of oil over medium heat in a small to medium pan
2)Add rosemary and garlic, stirring until fragrant ~1-2 minutes
3)Stir in vineagr and simmer until thickened ~30 seconds
4)Stir in stock concentrate, water and sugar
5)Remove from head and strin in butter until melted
6)Season with salt and pepper to taste, then drizzle sauce over meat or serve on the side
