2 large baking potatoes (about 750g), peeled
1 half small rutabaga (turnip), peeled
½ tsp salt
¼ tsp pepper
2 tbsp vegetable oil
1 cup shredded old cheddar
4 oz smoked turkey, chicken or ham, chopped (optional)
Sour cream for dipping

In a pot of boiling salted water, cover and boil potato and rutabaga for 10 min. Drain and cool. Coarsely grate into a bowl. Add salt and pepper, tossing gently to combine.

In a fry pan, heat half the oil over medium heat, swirling to coat pan. Pat half the potato mixture into pan, spreading to cover. Top with half the cheese (then the chopped meat, if using) and the rest of the cheese. Pat remaining potato mixture over top. Cook for about 10 min or until bottom is golden and crispy.

Using a spatula, gently loosen rösti from pan. Invert a flat plate onto pan. Using oven mitts and holding pan and plate together, invert rösti onto plate.

Return pan to heat. Add remaining oil, swirling to coat pan. Slide rösti back into pan, cooked side up. Cook for another 10 minutes until bottom is crispy and golden. Transfer to cutting board. Cut into wedges. Serve with sour cream.
