½ cup butter
1 med onion, chopped
1 can cream of chicken soup (284ml)
1½ cups cheddar, shredded
1 cup sour cream
1 bag frozen hash brown potatoes (2lb/1 kg)

Directions:
Directions:
Preheat oven to 350ºF. Melt butter in a large pot over medium heat. Add onions and cook, stirring, for 5 minutes or until the onions are softened. Whisk in soup, cheddar and sour cream. Cook until smooth and cheese is melted. Remove from heat.

Gently stir in the entire bag of diced potatoes. Transfer mixture to a large casserole dish, like a 9 x 13” glass pan. Bake in 350ºF oven for 1 hour.
