1 cup red lentils
5-6 cups chicken or vegetable stock
½ large onion, chopped
1½ tbsp minced garlic (or 3 cloves, peeled and minced)
1½ tsp ground cumin
½ tsp paprika
3 med carrots, peeled and sliced
1 small red pepper, chopped
1-2 green onions, thinly sliced
¼ cup fresh cilantro, chopped
1 -2 tbsp lemon juice, freshly squeezed

Directions:

In a large pot over high heat, bring stock and lentils to a boil. Skim off froth. Stir in chopped onion, garlic and seasonings. Reduce heat to med-low. Add in chopped carrots and red pepper.

Simmer, covered, until carrots are very tender, about 15 minutes. (Lentils will need a total of about 20 minutes to cook.) Remove from heat and stir in green onion, cilantro and lemon juice.
