1 can kidney beans, drained
1 can black beans or chickpeas (or a blend of both)
1 can tomato sauce
2 tbsp oil or butter
2 cups fresh tomatoes, chopped (2 small or 1 large)
1 med pepper (green, yellow or red), diced
1 small onion, peeled and diced
1 tbsp crushed garlic
1-2 tbsp ground cumin
˝-1 cup cilantro leaves, chopped
˝-1cup cheddar cheese, shredded

Directions:
Directions:
Drain and rinse all beans that will be used and set aside. In a large pot, melt 2 tbsp oil or butter until it sizzles. Sauté peppers and onion until tender. Add chopped tomato and garlic, and sauté for 1 more minute.

Stir in tomato sauce, beans, and spices. Simmer for 15-20 minutes or until warmed through. Stir in or top with cilantro leaves. Top with a sprinkle of cheddar cheese if desired.
