3-4 lobster tails, fresh or frozen (thawed)
¾ cup melted butter, separated
1 tbsp minced garlic
Lemon wedges to garnish

Thaw and rinse lobster tails. If frozen, thaw in the refrigerator overnight. Check tails about an hour before cooking to make sure they are thawed out all the way.

With strong kitchen scissors, cut through the round (top) side of the lobster tails lengthwise. Begin the cut with the bottom blade right under the shell. Proceed down the center all the way to the base of the tail. Grab each side of the shell and gently pry the shell away from the meat. Carefully push the meat out through the slit and place meat on top of the shell, with the end still attached to the shell.

Brush ¼ cup of the melted butter over the lobster meat. Place tails on broiling pan. Broil on high, placing the oven rack so that the tails are about 4 to 5 inches away from the broiler. Broil for 6–10 minutes until meat is firm and opaque. A rule of thumb is one minute per ounce. Cooking time will vary depending on the size of the tails, so keep a close eye on them so they don’t burn. Do NOT over cook lobster, it will be tough, chewy and will not taste as good. Serve with the rest of the melted butter mixed with garlic for dipping.
