1¼ lb boneless salmon filet
¼ cup each: sesame oil and maple syrup
½ cup chopped fresh mint
2 tbsp pureed/grated ginger
1 tbsp red chili paste or dried chilies
2 tsp crushed garlic
6 cups baby spinach
1 cup cherry tomatoes
½ cup dried cranberries, if desired
¼ cup sunflower seeds
4 oz feta cheese or chevre
½ cup olive oil
¼ cup rice wine vinegar
1 tsp each: sesame oil, brown sugar
1 tsp crushed garlic

Directions:

Rinse salmon filets and pat dry. Place skin-side down in a shallow dish. Combine sesame oil, maple syrup, mint, ginger, chilies and garlic. Mix well and pour over salmon. Turn to coat. Cover and marinate in refrigerator for 10-20 minutes.

Place salmon skin-side down in foil-lined baking dish and coat with remaining marinade. Bake in 450°F oven 10-12 minutes or until salmon is opaque and flakes easily. Remove skin.

Meanwhile, mix spinach with tomatoes, cranberries, sunflower seeds and crumbled feta/chevre. Whisk olive oil, rice wine vinegar, sesame oil, brown sugar, garlic, and salt & pepper to taste. Divide salad into servings. Pour dressing over salad. Top with cooked salmon.
