1 stick of cold butter
1 pkg Betty Crocker oatmeal cookie mix
FILLING
3 (8 oz) pkg cream cheese
1 C sugar
1 tsp vanilla
3 eggs
1 can sweetened condensed milk
3/4 C Nellie & Joe’s Key West lime juice
2 tsp grated lime zest
2 T flour
TOPPING
3/4 C reserved cookie crust crumbs
3/4 C coconut
3/4 C Macadamia nuts, chopped

Heat oven to 350 degrees. Spray 9x13" pan or Pyrex. In medium bowl, cut butter into cookie mix until mixture is crumbly. Reserve 3/4 cup for topping. Press remainder into baking pan. Bake for 10 minutes.

In large bowl, beat cream cheese, sugar and vanilla until smooth. Beat in eggs one at a time. Stir in condensed milk, Key lime juice, zest and flour. Pour filling over crust. Mix reserved cookie crumbs, coconut and nuts together. Spread evenly over top of filling.

Bake for 30-35 minutes or until light golden brown. Cool 1 hour and then refrigerate at least 4 hours before serving.

This recipe is from Ronda Kinnick. It is one of the best desserts I have ever tasted. It is the crust and topping that makes it so GOOD!
