6 large potatoes, washed and scrubbed
1/4 cup butter
1/4 cup all-purpose flour
2 cups milk
1 cup shredded cheddar cheese, divided
1/2 cup cooked and crumbled bacon
1/4 cup chopped green onions
Salt and pepper to taste

Preheat Oven:
Preheat the oven to 375°F (190°C).
Grease a baking dish.
Prepare Potatoes:
Slice the potatoes thinly, leaving the skins on.
Make the Cheese Sauce:
In a saucepan, melt the butter over medium heat.
Stir in the flour to make a roux, cooking for about 2 minutes until lightly golden.
Gradually whisk in the milk, stirring constantly until the mixture thickens.
Remove from heat and stir in half of the shredded cheese until melted.
Season the cheese sauce with salt and pepper to taste.
Assemble the Dish:
Layer half of the sliced potatoes in the prepared baking dish.
Sprinkle half of the bacon and green onions over the potatoes.
Pour half of the cheese sauce evenly over the top.
Repeat the layers with the remaining potatoes, bacon, green onions, and cheese sauce.
Bake:
Cover the baking dish with foil and bake for 45 minutes.
Remove the foil and sprinkle the remaining shredded cheese over the top.
Return to the oven and bake for an additional 15 minutes, or until the potatoes are tender and the cheese is bubbly and golden.
Serve:
Allow the dish to cool slightly before serving
