1 - 9 Inch Pie Crust

1 ¾ C Mashed cooked Sweet Potato

1 Cup + 2 T. Brown Sugar

2 Eggs

½ C Sour Cream

¼ C Butter - Melted

1 ¼ tsp Ground Cinnamon

1 C Pecan Halves

½ tsp Ground Ginger

Whipped Cream

Extra Pecans

Directions:
Preheat Oven to 375º Degrees. Fit dough into a 9" pie pan. Chill 30 minutes. Line crust with foil and fill with dried beans. Bake 20 minutes. Remove beans.

1. Whisk sweet potato, 1 cup sugar, sour cream, eggs, butter, 1 tsp cinnamon, and ginger together.

2. Pour into prepared crust.

3. Mix Pecans with remaining sugar and cinnamon.. Sprinkle over filling.

4. Bake 35-40 minutes until set.

Top with Whipped Cream and additional pecans.
