Satay Sauce


Ingredients:

A. ˝ cup vegetable oil

B. ˝ tbsp lemongrass powder or puree
˝ tbsp pureed ginger
3 oz onion or shallot
1 tbsp chili flakes
1 tbsp curry powder
˝ tsp turmeric
˝ tbsp tomato paste (I use ketchup!)

C. ˝ cup lime juice
1 can (29oz) coconut milk
1.5 oz honey
1.5 oz white sugar
1 tbsp salt
1 cup water
˝ lb ground roasted peanuts

Directions:

1. Grind peanuts finely in a food processor and set aside.
2. Puree all items in ‘B’ in food processor.
3. In a med-large pot, add oil to ‘B’ and sauté until fragrant.
4. Add ‘C’, bring to a boil and simmer 10 min, stirring occasionally.
 

Noodles

Ramen or other fine noodles
Chicken, cooked and cut into bite size pieces
Mushrooms, sliced
Red peppers, sliced into strips
Chopped peanuts, cilantro or green onion to garnish

Directions:
Directions:
Cook ramen noodles to desired doneness and drain. In a large skillet, add a small amount of satay sauce. Add chopped mushrooms and peppers. Sauté until tender. Add cooked chicken and the rest of the sauce being used. Serve on top of noodles. Garnish with chopped peanuts, cilantro and/or green onion.
