Mom's Quesadillas Recipe

1 large chicken breast
2 tbsp taco seasoning
˝ tsp cumin
3 tbsp water
4 large tortillas
3 cups cheddar cheese, shredded
1˝ cups tomatoes, chopped and seeded
1 cup green onions, sliced
Sour cream, salsa and/or guacamole for dipping.
Chopped cilantro for garnish.

Heat a small saucepan to medium. Sauté chicken breast until cooked through. Remove from heat and cool. Slice thinly. Place slices back in saucepan on low. Add water, taco seasoning and cumin. Stir to coat chicken pieces. Simmer 5 minutes and then remove from heat.

On one of the tortillas, spread a small amount of cheddar, then place half of the chicken slices in a single layer. Scatter half of the chopped tomato and half of the green onion. Cover with half the remaining cheddar. Place another tortilla overtop.

Place in large frypan over medium heat. Fry for about 2 minutes then, placing a plate over top if needed, flip the tortilla over. Continue frying for two more minutes and remove from heat. Place cooked quesadilla on a wooden cutting board to cool. Repeat all of the above for the second quesadilla.

Slice each quesadilla into 6 wedges and serve with salsa, sour cream, or guacamole for dipping and chopped cilantro for garnish.
