2 or 3 large tortillas
2 cups mozzarella cheese, shredded
1˝ cups tomatoes, chopped and seeded
1 avocado, peeled, pitted and sliced
Few basil leaves, chopped
Salt & pepper, to taste
Sour cream, salsa and/or guacamole for dipping.

Prep all ingredients. Spray a large non-stick frying pan with oil and heat over medium. While pan is heating, assemble the quesadillas: Scatter mozzarella, chopped tomato and basil leaves over one half of the tortilla. Arrange avocado slices on top of the other ingredients. Season with salt and pepper if desired.

Transfer to fry pan and fold empty side of tortilla over to make a semi-circle shape. Place a dinner plate over top to flatten. Cook until golden brown, 2-4 minutes, and flip. Cook for another 2 or so minutes. Remove from pan and slice into 3 large wedges. Serve with dollops of sour cream, guacamole and/or salsa for dipping.

** Layer in slices of cooked chicken if desired.
